Ingredients

Sauce • 1 tsp black sesame paste • 1 tbsp olive oil • Hot noodle water to loosen • Salt to taste • Optional lemon zest only (not juice)

Directions

shrimp:

The rules (important) • High heat • Dry shrimp • Very short time • No sauce until the end

  1. Dry them aggressively Paper towel, really dry. Moisture = steam.

  2. Heat pan until just smoking Use olive oil (or olive + a touch of butter, but butter alone will burn).

  3. Single layer only Don’t crowd.

  4. Sear time • ~30–45 seconds first side • Flip • ~20–30 seconds second side

  5. Immediately remove They should be: • Slight browning • Just opaque • Still springy, not tight

  6. Season after Salt, lemon zest, or Laoganma off heat.

  7. Cook noodles, rinse cool.

  8. Mix sauce until glossy and thin.

  9. Toss noodles.

  10. Add shrimp + shredded cabbage.

Notes

A bit bland, as I didn’t add any salt. Lemon zest added some good flavor. I think adding salt to the shrimp would be good. Otherwise it’s a bit flavorless. Laoganma on top added good flavor.
