
Quick lunch.
Ingredients
- Tortellini
- 1 Tbsp (or more) Ajvar
- 1 Tbsp kajmak
- 1 Tbsp Butter
- Olive oil
- 3 cloves Garlic chopped/minced
- Cherry tomatoes, halved
- Parmesan / Pecorino (I used pecorino)
Optional:
- 1 tsp laoganma
- basil
Directions
- Cook tortellini according to bag instructions
- Heat pan, combining butter, ajvar, kajmak, olive oil
- Add garlic for 30 sec, maybe some additional olive oil on the side
- Optionally add laoganma for fusion kick (I think it makes it taste a lot better)
- Emulsify sauce with pasta water
- Toss tortellini with sauce
- Top with halved cherry tomatoes, basil, and pecorino
Notes
I used 4 cheese tortellini but I think tortellini with prosciutto would be delicious too
I have tried both 4 cheese and prosciutto+cheese tortellini, both were very delicious!
